Our Story

How Far We’ve Come

Hello friends, my name is Josh Dillon and I am the creator behind Buddha Belly Chef!


For those not familiar with me I started working in restaurants in 2010. I didn't go to culinary school and I didn't learn under international chefs. I did however work my way up in the kitchen from dishwasher to Chef. All while learning the love for food that I had hidden within me.


Some friends wanted to open a Southern India inspired restaurant, Mirchies Indian Eatery, with their family recipes. Little did I know how much I was going to discover my love of food. The variety of spices, aromas and flavores were mindblowing! Over the years I worked at a variety of local cafes including Greek, Vegan "Cafe Gratitude", Bar & Grill "Tapcade", my own burger cafe "Snack & Grill" , a food truck (for a local bar) "Helen's J.A.D." , Filipino cuisines "Shaka Noodle Shack" , and currently Longboards while working to get my own food on the street.


Over the past few years I have worked with the creator and partner of Longboards. Gilbert has helped me find my inspiration again in food and has taught me more unique food from around the world. We have collaborated on many specials that have once again expanded my mind!


Over the years I also found that sharing food with others is a great way for me to share my passion and make others happy while making their bellies happy too! From this I have found a way to spread the joy even further with a "Pay-it-forward" meal. This will be a meal purchased in advace for someone in need. I have spoken with numerous local organizations in our city about the donations, each are happy and willing to participate.


With the variety of food I want to offer and the support of friends and customers I have decided to get a food truck! This concept will allow a rotating menu with seasonal items along with specials. I will also be in many events around town from private to public. I do have my eye on a fully equipped food truck! With this truck I will feature fresh Naan, Indian Chicken Korma and Korean Bulgogi Pork will be just a few of the daily items offered.


There will be a variety of India, Asian and local fusion. Also I am teaming up with Longboards Wraps & Noodle Bowls and will feature a minimal menu of their wraps and noodle bowls. With this colaboration I will be available for corporate events, family gatherings, street functions and daily locations for lunch!


In conclusion I would like to ask in your help in making my dream come true. I want to bring you fresh unique food anywhere in the city with my own food truck. I have found a truck fully equipped and see the great potential it has. So please spread the word and come try my food.
